Salmon Fillet with French Peas

Wednesday is my food shopping day, I am trying to run the freezer stock down a bit, so I can fill it with Christmas goodies. I keep a bag of Aldi frozen Salmon fillets as a standby, and that’s what I am using.


I also have some Baby Gem Lettuce to use up, and some salad potatoes, so French  peas and Herbed Salmon Fillets 😍


Heat the oven to 200 and place the salmon fillets, onto an oven proof dish with a squirt of olive oil, I have coated the Fillets in a cheese and herb breadcrumb mix, I had in the freezer left over from weeks ago, cook for 15-20 minutes


I started by par boiling some new potatoes and slicing them. Peel and chop a medium brown onion, and gently fry off in butter and olive oil.



Add the sliced potatoes and cook till slightly browned, then add frozen peas and a pinch of black pepper and 200ml of veg or chicken stock. Leave to simmer for 10 minutes, till the potatoes are soft.


Finely slice the Lettuce, ready to put in at the last minute.


Just before serving, add a splash of double cream to the potato and pea mix, then add the sliced Lettuce. Taste and season.



Plate up and top with the Salmon Fillets and enjoy – light but so tasty, 😋
