Prime Pork Steaks with Potato Salad and green salad

I am using up some beautiful Pork Steaks from Market Porter, which I have frozen, the quality is just amazing, I’d highly recommend them.

I also have salad potatoes and green salad the needs using up, so it’s a no brainier – a delicious griddles pork steak with a lovely chunky Potato Salad and dress with the green salad.

Since youngest went to Uni, I have been having problems getting the quantity right with fresh fruit and veg, a friend recommended that I buy the ready made salads from Aldi. It contains lovely crunchy lettuce and sliced pepper, grated carrot with whole baby tomatoes and cucumber ‘half moons’ and at Β£1.15, it is cheaper than buying it all separately.

Allow enough time to boil some salad potatoes till tender, but not too soft – leave to cool completely.

When cold, I slice them and add a couple of big spoonfuls of Mayonaise, a teaspoon of grain mustard.

Add a bunch of chopped spring onions and stir through, season to taste a final stir and pop into the fridge till ready to serve.

I start gently heat the griddle to ‘searing’ heat, and rub olive oil, salt and pepper into the Pork Steaks and carefully place onto the hot griddle, cook to taste turning halfway through. Leave to rest on a warmed plateΒ ffor a couple of minutes as you plate up your potatoes and salad.

I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
