Manic Monday here… very busy work day, then came home to sort out the final bits on Hubby’s VAT return 😳 Need something quick but comforting. Gorgonzola and walnut Gnocchi.
I love Blue Cheese, I love walnuts – okay, I just love food…. but this combination of flavours with soft pillows of gnocchi with a pop of green from the wilted spinach was just too much to resist 😋 I found this Recipe and eerrm ‘amended’ it to what I had in
I start by gently dry frying some walnuts, then set them aside.
Boil a pan of lightly salted water ready to put the gnocchi into for a minute or so till floating and cooked, I use Aldi Gnocchi, which is a great cupboard standby, drain and stir into the sauce.
In a pan lightly fry a very finely chopped onion, then add 250ml double cream and 150g of blue cheese, gently heat till cheese has melted, add a good handful of spinach, a shake of dried sage and season to taste – add the cooked, drained gnocchi stir through
Serve with a sprinkling of toasted walnuts – very rich and very tasty 😇
Would have been nice to have a salad with it – but someone…. (Hubby) used the lastbofmthe salad in a lunchtime sandwich 🙄
