Our buddy came up trumps again and gave us a lovely big Sea Bass yesterday. I was planning a chicken stir fry, so no problem to swap chicken for fish – yummmm…
Hubby ‘dressed’ the Seabass for me.
the veg has been chopped ready to throw in.
With grated garlic, finely sliced ginger, and a blob of oyster sauce.
Into a hot pan I flash fry the garlic and ginger, swiftly followed by the broccoli, spring onions, mushrooms and baby corn.
Add a splash of water to create steam, when vibrant green add a blob of oyster sauce, stir through, and I am adding a small, portion of rice, that I froze the other day, as it needs using. I cover and leave for a few minutes whilst I cook the fish fillets.
Lay the well seasoned Sea Bass Fillets skin down into a hot pan with a little olive gently pressing down so the Fillets don’t kick up. Once crispy and golden on the skin side, flip over for another minute or 2, till cooked through.
Add freshly chopped coriander to the stirfry Veg, and Serve topped with the gorgeous Sea Bass – yummmm 😇
