Ohh my word.. it has been so cold today.. proper soft southerner here, a light frost on the car in the morning and I,m off to get my Thermal long johns on 😉
The woodburner is on, the cats are viaing for position in front of it, it’s time to make dinner.
I have a bag of Aldi frozen prawns to use (a bit more space in the freezer), the remaining mange tout and mushrooms, as well as a tin of coconut milk – a couple of spoons of Green Thai curry paste and dinner will be ready in minutes.
I start by peeling and dicing a small onion and gently frying it in a pan,
when translucent add 2/3 spoons of the curry paste and stir.
Add the tin of coconut milk, reduce by a third then add the chopped Veg and then the raw prawns and just before serving a handful of chopped coriander.
When cooked through, serve on rice, I am using a Aldi micro pack of bulgar wheat and quinoa, and enjoy.
We are having Prawn crackers and some Aldi Chinese vegetable parcels for an additional bit of crunch 😋
I like this curry very wet, almost soup like- yummy 😇
