Winter Warmer – Toad in the Hole, Carrot and Swede mash, steamed greens with Onion gravy..

Today, I have been giving the house a good clean in readiness for the return of Youngest and his siblings over the Christmas period.

It is cold and bright here, the low sun is streaming though the windows and although it is lovely, it shows every speak of dust on the windows  🙄

Hubby is out working in this weather, so I will make Toad in the Hole, with mash, greens and onion gravy. For those not from here, Toad in the Hole, is Sausages cooked in a batter pudding – it is lovely 😊

I am making the batter well ahead, with 4 eggs, a cup of plain flour, salt and pepper and enough very cold water to make a double cream consistency- whisk together then leave for a couple of hours.

Peel, dice your Swede and carrots and slice up an onion and your Greens so, you are all ready to go.

Into a hot oven put an ovenproof dish with some vegetable oil in, when this is piping hot, add the sausages and then after a quick whisk, the batter and quickly back into the oven for 30-40 minutes till huge and golden.

Boil the Swede and carrots till tender and mash with plenty of black pepper and butter, we like it ‘rustic’.

Gently fry the onion till golden and I am adding gravy granules and water to make the gravy as there are no meat juices.

I steam the greens till vibrant green, the serve up – delicious 😇
