Uni Student (Homemade) Home and (take)away….. Cottage Pie

…. one for tonight and one for a ‘takeaway’ for youngest take back to Uni to put in his freezer.

Youngest had to come back for a medical appointment that couldn’t be changed, and as Wednesday and Thursday are study days for him, he thought he’d ‘study’ at home and let Mum do his washing and cook some comfort food 🙄


After a good 10 minute plus discussion about dinner tonight, he plumped for Cottage Pie, Kale, carrots and gravy. I have blogged this recipe before, so sorry for repeats.


Peel and finely chop a medium onion, and gently fry in a large pan, followed by 500g of beef mince, break up the mince and brown off.  Add salt and pepper and a tablespoon of plain flour, stir well then add an Oxo cube, a good shake of Worcestershire sauce, a good squeeze of tomato purée and cook out.

img_1636Add enough water to cover the mince mixture then simmer for 20 minutes, stirring occasionally, once rich and thickened taste and season- I am adding frozen peas and sweetcorn to up the veg content.  Once warmed through, leave to cool in the base of an oven proof dish.


Rinse the pan and add 3 large chopped potatoes.


A pinch of salt and cover with boiling water – cook till tender, then drain, and mash with butter a splash of milk, salt and pepper to taste.


Spoon over the mince mix and run the tines of a fork over the top to create a rough top to catch and create crispy bits 🤗 Put into a preheated oven (180) for 30 minutes.


Whilst this is cooking, rinse the pan again and add chopped Carrot, salt and boiling water and cook till just tender. Finely slice the Kale ready to quickly cook whilst plating up the rest of the meal.


A proper kitchen staple meal for the UK, but warm, tasty and so comforting – yum 😍
