Christmas catchup… Present Wrapping and Hamper Filling…

I have been wrapping presents for most of the day, it always starts well, lovely wrapping, neat lines etc after an hour it’s not such fun 😳 So needed a change…

Had a break to make some fudge, this week I’m making some for the friends that provide us with game and fish, in return I make them cakes etc, and this time of year gifts for their kids friends, teachers etc.


This is the base Recipe I use, I then ‘tweek’ to make various flavours – in this instance salted caramel, white chocolate and raspberry and plain caramel.

img_0749To the Thermomix bowl grate 200g of white chocolate (speed 10 for 5 seconds) then set that aside, without washing the bowl add a tin of condensed milk, 125g unsalted butter, 160g of light brown sugar (white granulated for white chocolate one), 125g golden syrup then mix on speed 3 for 8 minutes at temp 100.  Scrape the bowl down and cook for a further 20 minutes, heat Varoma at speed 3 – add the grated chocolate for the last minute.


Pour immediately into a lined heatproof dish (shape and size of your choosing) and leave to set for a good few hours.

White Chocolate and Raspberry Fudge 
They love these fudge Reindeers, so easy to make and good fun. Pour the fudge into circular trays and cut into 8 triangles, pop into cellophane cones, tie off with brown pipe cleaners and add a pair of Google eyes and a red Pom Pom nose 😇


I have got some decorative boxes for the teachers prezzies and a few stickers later – Big Reindeer …
