I will be honest, I forgot about a meat free meal tonight, Youngest has given us about 5 different sets of dates that he will be returning for Christmas, and today was one date I had set aside to collect him….. He now wants to come home Wednesday 🙄
Anyway, looking in the fridge, I appear to have mostly potatoes, onions and coriander, our friends have us a dozen home laid eggs, so….. Spanish Tortilla 🤗
Its not traditional, I,m using up some very bendy spring onions and the remains of a pack of coriander, but it’s filling, comforting, uses up what we have and is cheap. It will also stretch to my lunch tomorrow – bonus….
I am starting my halving the potatoes lengthways, into quarters lengthways, then slice very thinly.
Into an ovenproof frying pan, put a good glug of olive oil, heat up and gently fry the potatoes, not to brown them, just to tenderise them. You will need to add a good 2 teaspoons of salt, it sounds like a lot, but you need the seasoning and the Tortilla will serve 4-8 depending on how hungry you are.
Once the potatoes are tender, remove from pan and set aside.
Peel and finely slice the onions and with a bit more oil, gently fry these till soft and translucent. Again, set aside.
In a large bowl, crack 6/8 eggs depending on size, I am using 8 medium ones, which together with a shake of salt and pepper and stir in the sliced potatoes and onions, and I am adding the chopped coriander.
Heat the pan again, and when hot, tip the egg and potato mix into it, spending the potatoes out evenly, turn the heat down to medium low – after about 8-10 minutes you will see the egg ‘firm’ at th edges.
Make sure you have a large plate to hand to invert the Tortilla onto, do be careful, it can go very wrong, so I sit the plate over the pan (heat off) and using oven gloves, flip,the pan and plate upside down, then slide the Tortilla back into the pan uncooked side down.
Turn the heat back in to High for a minute, then turn down to medium-low for another few minutes. I like to leave this for a good few minutes, Tortilla tastes better warm rather than hot.
I am serving with a green salad but would like to be eating delicate cubes of it in a bar with an ice cold glass of dry sherry 😇
