Use it up Tuesday… Steak and Potato cakes

On Saturday we didn’t have our planned steak, we ended up with left over takeaway, on Sunday we had Leftover frozen stew, frozen Yorkshires and I made mashed potatoes – as the Yorkshires were so huge, I didn’t serve the mash, we would never have finished it all.


So, tonight I will griddle the steaks, and make Potato cakes from the left over mash.


I am mixing the mash with about 200g of grated cheddar cheese and 4 finely sliced spring onions, some limp chopped coriander and an egg.


Mix it all through, shape into patties and gently fry till golden brown on both sides and cooked through. I then place into a preheated oven at 160, while I cook the steak and veg.


The steak is simply dressed in olive oil, salt and pepper and griddled on a hot grill for a couple of minutes each side, cooked to how you like it, we like it rare.


I have used up some stray Mushrooms, quartered and dried in butter


and a couple of iffy tomatoes too – Yummy 😋
