Homemade Christmas gifts for Hampers and Gifting..

Now we are in December, the days and weeks evaporate and in no time it will be Christmas Day πŸŽ„Β Today I have been making a few more treats for friends and family, starting with Caramelised almonds, then Rocky Road.


These are easy to make and make your house smell like Christmas πŸ˜‹ Take equal amounts of Almonds, sugar and water and add a sprinkle of cinnamon.


I used 400g Aldi whole almonds, 400g granulated sugar and 400 ml water and a shallow teaspoon of cinnamon, put it all into a pan and stir over a medium heat and stir.


It is important that you stay with the pan, stirring regularly as it quickly turns into a syrup and burning sugar is no fun if it spills on you….


Keep stirring till the liquid is dissolved and the sugar crystals cling to the almonds – at this point turn out onto waxed paper and separate with a spoon and leave to cool.


Once cool, I store in a glass jar till ready to give away – I use cellophane cones with a twist tie, as it looks pretty, but you choose whatever you like.

Rocky Road….

This is a very quick make and people love it, a great way to use up some of those odds and ends.


I melted 300g milk chocolate (only 2 packs in the pic as I added a third later).


To the melted chocolate I addedΒ 50g of dried cranberries, 30g of mini marshmallows and 30g of Rice Krispies – use whatever you like, but try to have a fruit, a soft texture and something crunchy.


When this is all coated, tip into a lined tin and leave to set.


Cut into small peices and pop into gift bags – enjoy… πŸ˜†
