Meat Free Monday – Vegetarian Wellingtons

Like most of us, we are rushed off our feet at the moment, making sure work is finished in time for Christmas, and that all those last minute things are sorted.

When I was doing the food shopping, I spied a pair of frozen pies at Aldi, Vegetarian Wellingtons, filled with mushrooms, Brie and cranberry. They would be fab for Veggie guests Christmas dinner.

I will serve these with Mash, Coleslaw and Piccalilli, so next to no effort 😉

I have been crafting today too…  My lovely children have equally lovely boy/girlfriends, and this year for the first time, I wanted to make something ‘joint’ for each couple.  My youngest is a red head, gorgeous Auburn and his girlfriend is a tiny slim blonde, I don’t have a decent photo of them together, so I had to improvise – A picture frame, some game cards and a few photo’s and this is the result.

This will go in a hamper, with some His and Hers mugs, hot chocolate, mini marshmallows, bottles of booze, and some homemade fudge. I have made one for Hubby, with the word love and one of our favourite photo’s of us.

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
