Frantic Friday….A quick Thai style Pork curry

The news is full of stories about travel worries and crowded supermarkets, makes me realise how lucky I am to be tucked up at home – Shopping complete.

Like many of us, I am juggling those last minute Christmas tasks, and spent most of my Birthday deep cleaning and doing laundry – I,m not moaning, I got some lovely gifts, and Hubby had already taking me out for an amazing meal a month ago, before the madness of Christmas started 😉


Dinner tonight is a Thai style Pork and coconut curry and rice – I took 2 pork chops out of the freezer earlier this week, and they didn’t get used, so rather than waste then I will chop them up (2 chops to feed 3 of us), add some diced bell pepper and a couple of spoons of bought red Thai curry paste and a can of coconut milk.


Tasty and easy – perfect…..
