Budget friendly Seafood Spaghetti

As you know, I did a recent food shop at Iceland, and as part of my haul we bought Iceland Guazzetto Di Mare Seafood Medley with Mussels Clams & Pacific Scampi.

They cost £3.50 per box, and as Youngest is in for dinner with his girlfriend, I am using 2 packs, the spaghetti is 49p. This is a treat meal, prior to Youngest’s return to Uni, but if I were to buy the individual Seafood, it would cost a lot more than £7.50 for 4.

Anyway, I decanted the Seafood mix into a lidded pan, and at the same time put some spaghetti into boiling water.

The Seafood mix takes approx 9 minutes to defrost and cook though, I added additional fresh chopped parsley, and a splash for wine and a small knob of butter, but this down to my personal choice – the flavour of the sauce are great without the enhancement.

When the Seafoods are cooked through, drain and add the Spaghetti, stir through and serve with an extra sprinkle of chopped herbs, squeeze of fresh lemon juice and some fresh bread to soak up the juices.

NB If any of the shells don’t open, please throw them away, they will make you ill 😷

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
