Back to Normal Eve…

Back to work tomorrow, after nearly 3 weeks off, all but one day, it’s not going to be easy waking at 6am 😱

To make it a bit easier, I am prepping for the week, we always set our clothes for the next day, the last think I want to be doing at that time  of the morning, is finding an outfit and hoping that it matches etc 😴


I also make soup in the Thermomix for my work lunches, usually from whatever Veg is hanging around the bottom of the fridge, normally Aldi super 6 Leftovers.


This weeks soup is Sweet Potato, lentil, coconut and chilli soup – I peel 3 small sweet potatoes and an onion, these are roughly chopped and chucked into the Thermomix bowl.  I add a small red chilli, a leftover bit of ginger, half a tin of coconut milk that was sat in the fridge, a teaspoon of Veg stock and a litre of water – I cook this at heat 100, reverse speed 2, for 25 minutes.


Before I put this in, I prepped a cauliflower and put in the varoma basket, and popped on top while the soup was cooking.

When the soup is done, take off the steamed cauliflower and wizz the soup for 30 seconds at speed 8 and check for consistency and seasoning – I needed to add some salt and a bit more water – pour into,your containers to cool.


I then rinsed out the bowl and added 500ml milk, 50g butter, 50g plain flour, 100g cheddar cheese and  teaspoon of English mustard powder- cook at heat 90, speed 3 for 8 mins – Ta-Da…  cheese sauce for the Cauliflower cheese 😍 This makes 2, one for the freezer.


Then rinse the bowl again, fill with hot water and heat till boiling (heat varoma for 4 minutes speed stir) then into the Thermomix basket I put 4 eggs and cook at same heat etc for 10 minutes – Hubby takes sandwiches etc and is happy to have whatever needs using egg mayo will be this weeks favourite – so glad I won’t be working with him 😉

So 3 meals made in much less than an hour, using one bowl and a steaming dish 😇


Todays dinner will be gammon steaks with Cauliflower cheese and peas.


Youngest leaves us at 3, but as he didn’t get in till 4am, he won’t be awake till gone noon, he can have leftover Chinese before going, if he can face it 😷
