I have a lovely load of Iceland frozen fish and some Aldi Veg ready to use and really fancy a fish pie.
I am using part of a pack of white fish fillets, and part of a pack of smoked haddock, and an Aldi frozen Salmon portion that was hanging round the freezer, with some chopped leeks I have loitering in the freezer too from when Aldi had them on their super 6.
I took this picture to show that the White fish fillets are a good thickness, I have used 2 of these, each chopped into 4 big chunks. I bought 3 packs of fish for £10, one white, one smoked haddock and one Tuna steaks (not used here). I would guess that what is left from the 2 packs I have used (not counting the salmon fillet) I would have enough to make another 4 fish pies – so these pies, for the fish alone cost approx £1.11 each – Approx Milk 6p, butter 5p, cheese 20p, flour 1p, Potato 20p = less than £1.65 each pie. (Edit: added parsley approx 10p each).
I am using a pair of pie dishes, and put a Fillets of each type of fish on a bed of the leeks.
I make a cheese sauce in the Thermomix 300ml milk, 30g plain flour, 30g butter, 80g cheddar and a teaspoon of mustard powder all in the jug and cook at heat 90, speed 3 for 8 minutes. I found some parsley in the fridge which was wilting, so I whizzed that into the sauce too.
Season to taste and pour over the fish.
Whilst this is all happening, chop up and boil 2 large potatoes till soft, drain and mash with a knob of butter and enough milk to make a smooth mash. I don’t peel potatoes when I make mash, just wash and chop them up.
Top the fish pie and run a fork over the top to leave rough edges which go all crispy when cooked, pop into a preheated oven at 180 for 25-30 mins. The other one is for the freezer for a ‘can’t be bothered night’ 😇
Serve with peas or slices of bread and butter if you wish 😋
