Simple Mid week Chicken salad Wraps and Spicy Wedges πŸ˜‹

As I mentioned, it was my first week back and 3 early starts are taking their toll… Β I need a quick fix meal.

After me making flatbreads yesterday, I found a pack of Aldi Wraps I intended to give to youngest to take back to Uni, so rather than waste them, tonight’s delight will be Crispy chicken salad wrap, with a side of spicy wedges.

As part of my Iceland haul, we bought some a bag of Crispy Chicken Breast Strips, a quick snack meal for the kids over the holidays,Β they didn’t use them, so I will πŸ€—

These just get chucked into a preheated oven for 20-30 minutes,

along with some par cooked and ‘wedged’ potatoes, which I have dusted with smoked paprika and olive oil.

I microwaved a potato for 5 minutes, then cut into chunks, then into a freezer bag, add a glug of olive oil, a teaspoon of smoked paprika and a pinch of sea salt, add the Potato to the bag then shake to coat.

then onto a lined Β baking tray and into the hot oven.

For the salad, all from Aldi, I have torn the leaves off of a Baby Gem Lettuce, sliced some baby tomatoes, the left over ‘pickled’ red onion, sliced cucumber

a bottle of blue cheese dressing from Christmas – all of this ready for Hubby and I to self assemble into warmed Wholemeal Wraps.
