Experimental Icecream – Homemade Salted Butterscotch and Caramelised Almonds – Naughty.. but nice..

Everyone on the planet appears to be on a health kick at the moment – no sugar, no fat, no booze, running around getting hot and sweaty – if that is you, good on you, I admire your commitment to yourself.

I, however, have an Icecream Machine and I am not afraid to use it πŸ˜‰

I have been looking around on the inter web, and stumbled across this wonderful Β Recipe

I have, of course fiddled with it, so this is my adaptation.

I used a tin of Lidl condensed milk and put it in the basket of my Thermomix and filled with water till it was upto the top of the tin, cook for 95 mins heat 100 speed stir and when the time is up, leave it in the bowl to cool completely.

When cooled, empty out the water and dry off the Thermomix jug. When you open the tin, the very top still looks very pale, but, when you empty the caramel into the jug, you will see that gorgeous Dulce de Leche colour.

add 600ml double cream, and a large pinch of sea salt, a good blob of vanilla bean paste, mix for a minute, speed 2 no heat, just to combine.

Pour the mix into the Icecream maker bowl with the Icecream blade and pop into the fridge for an hour.

Turn on the machine for 40 minutes, adding 200g of crushed Caramelised Almonds for the last 5 minutes.

This is dangerously delicious- you have been warned……

I tipped the Icecream into a lock and lock box and put into the freezer for weekend treats 😍 And to stop me from scoffing the lot πŸ€—
