I love homemade soup, it is simple to make, uses Leftovers, it’s warming, tasty and cheap. I love to buy Aldi Super 6, and this often dictates what soup I make.
This time of year it is the perfect lunch or an easy filler for ravenous kids, you’ll be surprised what they will eat if they can’t see it😉
I never plan ahead, each weekend I check out what I have to use up in the veg department of my fridge. This weeks lucky finalists are an onion, a couple of small potatoes and a couple of carrots. I could have added a couple of rasher of leftover bacon, but have gone for a spicy veggie version, rather than bacon and lentil.
I will pair these lowly Veg with a handful of red lentils and a few spices and will have spicy lentil and veg soup. I use my beloved Thermomix, but it works just as well in a large pan, and a stick blender.
I simply peel and chop the onion and pop that in the bowl, followed by (unpeeled) chopped carrots and potatoes and about 80g of red lentils. To this I add a teaspoon of cumin and a teaspoon of coriander, a small chilli and about a litre of Veg stock, I cook this at heat 100, speed 2 for 25 mins, or on a medium heat on the job for approx 20-25 mins – keep an eye on it.
Once the veg is soft, taste the stock and season to taste, with the measuring cap in, blitz the soup for 10 seconds on speed 8, check for consistency and again for taste, adjust if needed. If doing in a pan, remove the pan from the heat and blitz using a stick blender, be careful, start slow, no one wants a face full of hot soup 😲
I use these plastic soup mugs, they can go from freezer to microwave and are ideal for work lunches – I always take mine in frozen, in a freezer bag, no spills in my bag 😇

sometimes seeded crackers (click Here for the recipe) , at the moment I have Oatcakes left over from Christmas, so I will use them up.
