Eggs-Actly what was Called for – Homemade Spaghetti Carbonara

Youngest has popped home for a couple of days for washing and feeding mainly 🙄

Its slightly thrown my meal planning out, but as we have a fair stock of basics it is not a huge issue.  We have pasta, eggs, cheese, bacon….

He has requested Spaghetti Carbonara, which happens to be one of Hubby’s specialities, so no cooking for me 🤗

He starts by adding spaghetti to boiling salted water, this cooks till soft, but slightly el dente.

In a shallow pan add some chopped garlic and bacon, we prefer smoked streaky, but whatever takes your fancy is fine.  You can use lardons, sliced gammon, pancetta or ham it’s a great use up dish 👍

Into a separate bowl add 70g of grated Paramasan, 2 whole eggs, and about 50-70 ml  of double cream with a pinch of salt and pepper to season and mix together till blended.

Drain the cooked pasta and add to the pan, swiftly followed by your egg mixture and bacon – stir through till the pasta is coated and the egg mix has formed a rich Creamy sauce.

Serve immediately with a sprinkle of grated Parmesan  😉
