Meat Free Monday – Dhal with Homemade Garlic and Corriander Naan

I have posted this Dhal before, when I made it as part of Hubby’s curry fest, but it is so good, that it is a fab standalone Meat Free Marvel 😍

The recipe is a Thermomix one, but can easily be adapted for a pan and a stick blender, have a look Here

Before I start the Dhal, I make the Naan dough, very easy, literally 2 cups of SR flour, a cup of plain yogurt (I use Aldi Greek yoghurt) a pinch of salt and a splash of oil – mix together with your hands till it comes together into a smooth dough and leave for 20-30 mins to rest. This will make 2-4 Naan depending on size.

Start with a peeled, quartered onion, a chopped medium carrot, a thumb size piece of ginger, 2 peeled cloves of garlic and a roughly chopped red pepper into the Thermomix bowl and wizz on speed  7 for 5 seconds. (if using a pan, chop all more finely for even cooking)

Scrape down the bowl, and add 200g of red lentils, a standard tin of chopped tomatoes, 200ml coconut milk (half a tin), 200ml water, a teaspoon each of cumin and corriander, a small red chilli (add more or less to taste).

Cook at heat 100, for 25 minutes speed 2.  When done season to taste.

Whilst this is cooking, Preheat the oven with the baking sheets left in, and take a golf ball size piece of dough, using plenty of flour on your hands, press out till thin and place on an dry oven tray in a preheated oven (200) for 10-15 minutes. add a slice of garlic butter on each Naan some chopped coriander and pop back in the oven for another couple of minutes till melted.

To Serve I add to the Dhal a handful of chopped fresh corriander and a drizzle of plain yoghurt.

Cheap and delicious – yum…….

PS you can add the remaining coconut milk to any leftovers and make into soup – bonus 😇
