At the end of the month, all of those little bits you stashed in the freezer come into play.
I have taken a pack of finely sliced rare roast beef from the freezer, from a meal I made in December, from an Aldi Beef Joint. I defrosted it and popped it into an ovenproof dish, with a splash of water, covered with foil and into a hot oven till warmed through, keep the water to add to the gravy.
Roast Beef, golden roast potatoes, Parsnips, carrots, frozen homegrown green beans, Homemade Yorkshires and lashings of gravy – Yum…. not bad from leftovers 😇
The potatoes are peeled and chopped, and I have some parsnips in the freezer from when Aldi had them in their Super6. Homegrown green beans, and Lidl special buy carrots.
I make the Yorkshires by adding 2 whole eggs, half a cup of plain flour a pinch of salt and enough very cold water to make a ‘double cream’ thickness – I leave this batter for at least an hour to ‘rest’ then pour into very hot oil and cook for 30-40 minutes till huge and golden 😇
I am not one for bragging, but I had to put an egg next to the Yorkshires for scale !!!! 🤗
I tossed the par cooked potatoes into hot oil for 40 minutes into a preheated oven, add the parsnips and sweet potato after 10 minutes. The carrots and green beans are steamed.
Serve with a delicious beef gravy and lashings of horseradish sauce 😋
Not bad for leftovers 😇
