Mid week again – weather is still bleughhh, want something warm and spicy. A thick and spicy fish stew will hit the spot, one of the lovely ladies on Moneysavingexpert.com forum gave me basic recipe, which I have tweeked to my taste, using what I have in – Thanks for the inspiration Lorralozzle ๐Ÿ˜‡

img_2156As part of my Iceland haul last month I bought white fish fillets as part of their 3 for ยฃ10 deal, I have Aldi peppers, onions and passata to use and the remainder of the pizza sauce (tomato, garlic and onion) as well as a baguette loaf in the freezer to use – Spicy fish stew with Homemade bread ๐Ÿ˜‡

I start by peeling and finely dicing an onion and a clove of garlic and gently frying them in olive oil. ย Add a sliced pepper, and add a small pack of passata, Stir though, then add smoked paprika to taste, I used a teaspoon – I also added the leftover pizza sauce, buy that is only because I had it to use up.

Cook the tomato mix down till it’s thickened, taste and season.

Add the thick cut chunks of white fish and cook for approx 5-10 minutes till the fish is cooked through. Adjust seasoning to taste.

Serve with fresh crusty bread and enjoy.

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
