Baby Boy goes back to school…. packed lunches for hollow legs.

Youngest is back – I swear we see more of him now, than before he went to University πŸ™„

He is doing 2 weeks work experience at his old primary school, which he is really looking forward to, and we are having bets on how many times he calls staff ‘Miss’ – it must be really weird going back to your first school and entering the ‘staff room’…

The downside to this, is that I am catering for his ravenous appetite and his need for a packed lunch – he is more than capable of making his own, and indeed will be – but for his first week I thought I would treat him πŸ˜‰

img_2209His favourite sandwiches are Ham and cucumber- I make these a few at a time and use frozen sliced bread – it is easier to spread butter on, doesn’t tear and will be defrosted well before lunchtime even if made in the morning.Β I love Aldi Torchon ham, it tastes like ham should.

I have a HUGE supply of Lock and Lock boxes, so use them rather than plastic bags – just personal choice.

As an alternative I have made a Tuna, sweetcorn and spring onion pasta salad.

Its cheap, tasty and filling – 4 tins of Aldi Tuna in brine cost just over Β£2 and the added salad is what I would buy anyway – the pasta was 25p.

I have also made Chocolate Brownies – an after dinner treat for us with Homemade Vanilla Icecream- I useΒ This recipeΒ for the brownies.

These will be cut up for lunch boxes too.

I have a load of fruit for us to grab and crisps/nuts/seeds for picking at.

And Aldi Greek layered yoghurts.

I hope this will keep him going till dinner time πŸ˜‰

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
