Tonight, I am making Meatballs and spaghetti in a homemade tomato, butter, basil sauce 🤗 The sauce is from a Pinch of Yum chicken pasta recipe and is lush see Here
I split each of the Meatballs into 2, making them bitesize. Then in some olive oil, gently fry off to brown , then set them aside.
Let the oil cool a little, and add a tin of chopped tomatoes and 2 crushed cloves of garlic, let it cook down, add salt and pepper to taste, then add a third of a bock of unsalted butter, stir till melted in.
Return the Meatballs to the sauce, and heat till cooked through.
Finely slice a bunch of basil leaves and add to the sauce, just before serving.
Cook enough spaghetti for 4 (or 3 hungry people), stir into the sauce and serve with a grating of Parmesan.
And slices of dripping garlic bread 😇
