Midweek again – even though I write meal plans, I sometimes slip up and forget to buy something, or simple don’t fancy what I had planned.
I have been shopping, and have a pack of Aldi Chicken Thighs, a couple of packs of Asparagus and randomly a tin of new potatoes – I got chatting to a lady in Aldi and she asked me to pass her a tin of potatoes whilst I was grabbing some tin tomatoes and I asked her what they were like, she raved about them, so for 19p I thought I’d try them.
In a baking tray, I sprinkled olive oil, the drained tinned potato’s,
a load of cherry tomatoes and 2 packs of Asparagus. I sprinkled over more olive oil, salt and pepper, a dusting of dried oregano and a shake of balsamic.
I then boned and trimmed the chicken thighs and popped them on top of the veg.
Into a hot oven (180) for 40 minutes and serve.
The potatoes were fine, I wouldn’t rave about them, but in this type of dish, a stew or a potato curry they would be great and that cheap… brill 🤗
