Friday night is Date Night and I won’t be cooking 🎉
I want to fill the cake boxes though, so will have a bake off – the radio goes on and off I go baking up a storm for Hubby (and Youngest when here) to have something sweet to grab.
I am making Brownies again, as the last batch disappeared the same day, via Hubby’s work mates… I will also make some coffee and walnut cakes as I have a real fancy for them.
I start with the brownies, I make these a lot so could almost bake them blindfolded- here’s a Link to a previous blog. Put the oven on to 180 to heat up, and line a baking tray with greaseproof paper ready to go.
Into the Kitchenaid bowl I add 6 medium eggs and 500g of sugar with a large teaspoon of vanilla bean paste – whisk till light and fluffy and doubled in size.
Whilst this is whisking add 400g of dark chocolate (I use Aldi basic at 33p a bar) and 375g unsalted butter all chopped up, I microwave this for 2 minutes and mix together till it forms a smooth glossy sauce, this is added to the egg mix and continue to whisk till blended. Slow the mixer down and add 225g plain flour, mix for a minute, and using a silicon spatula, fold any remaining flour in (add nuts or whatever you want at this stage) and scrape into the lined baking tray.
Into the oven for 25 minutes – no more or it won’t be squidgy…
For the Coffee and Walnut cakes, I am using my Lakeland minimloaf tins, this means I will eat 1 and not half a large cake at a time 🤣
I line the individual holes with a piece of baking paper before starting.
Into the (cleaned) Kitchenaid bowl, goes 200g of softened chopped unsalted butter, a pinch of salt, a teaspoon of vanilla bean paste, 100g of sugar, 100g light brown sugar and beat till lightened and fluffy, add, one at a time 4 medium eggs, ensuring one is mixed in before tipping in the other. Then add 200g of self raising flour, and 2 tablespoons of espresso (strong instant will do).
Mix in 75g of chopped walnuts and spoon into the mini loaf tins.
Into the oven (180) for about 15 minutes, then leave to cool before tipping out. I like them just like this.
You can make a water icing but using 200g of icing sugar and adding strong coffee by the teaspoon and mix till you have a thick liquid at ‘ribbon’ thickness and spoon onto the cakes- leave to set and plant a half Walnut on if you want to. 😇
