‘Flipping’ Good American Style Blueberry Pancakes

Youngest goes back to Uni after his placement has finished, so he will miss Pancake day.


Aldi have Blueberries as part of their Super6 at the moment, so American style Blueberry Pancakes, with sliced bananas and maple syrup for bunch 😍


In a large bowl, add 200g of self raising flour and a teaspoon of Baking powder, mix together.


In a separate bowl whisk together a whole egg, 300ml milk and a knob of melted butter and a blob of vanilla bean paste.


Mix the wet ingredients into the dry and whisk till smooth- add a pack of Aldi,s Blueberries and mix in.


Heat a frying pan and melt a little butter or oil and for each pancake add 2 tablespoons of batter – make them small and thick, these are more like a griddle cake than our thin pancakes.


Cook for a minute or so on each side, till golden on the outside and cooked through, continue till all the batter is used up, keeping the cooked pancakes warm in a warmed oven.


When ready, serve with sliced banana, a few fresh blueberries and a drizzle of maple syrup – Yummmm….
