Parmesan Crusted Hake with Potato salad and Rocket Salad.


It’s nearing the end of my food shopping week, so I wants to have a bit of a use up. I have some Aldi Hake Fillets in the freezer, salad to use up and salad potatoes too.


I start by making a herb crust, I throw a frozen crust of bread into the Thermomix bowl, a thumb size piece of Parmesan, a peeled clove of garlic and a pinch of ground black pepper.


Whizz on speed 10 for 4 seconds, then add a handful of flatleaf parsley that was behond its best and whizz again for a second or 2.


I freeze any leftovers it’s great for topping Cauliflower cheese too 🤗


I boil the salad potatoes till just tender, and leave to cool – when cold, slice the potatoes and add a tablespoon of mayonnaise, sliced spring onions and season to taste – pop in the fridge to cool.


I oil an oven proof dish and lay the fish fillets out, with a teaspoon I coat the fillets first with Dijon mustard, then with the bread crumb mix – Preheat the oven (200) and pop the fish into the oven for 10-15 minutes, till the fish is cooked through and the topping is crisp.


you can grill the topping to finish off if you want it extra crisp.

Serve up with salad, potatoes and a glass of chilled dry white wine 😉
