Fakeaway – Thai Green Chicken Curry – YOUNGEST COOKS!

So, as I did my ‘Supermarket Sweep’ around Aldi, I grabbed a jar of Thai Green Curry sauce, some vegetable spring rolls, rice and Prawn crackers – I actually love the fact my weekly shop takes 30 minutes max, including parking – I throw all my lovely purchases into a huge Ikea bag, which gets hauled into the boot and I’m off home 🤗

So tonight’s dinner is a simple put together meal. AND YOUNGEST IS COOKING IT !!!!

He chops the Chicken, I have 4 Thighs each chopped into 4/6.  He dices and fries an onion.

add the  chicken and brown off,

then add the sauce, a quick stir and simmer for 15 minutes. Add a handful of shredded coriander and stir through just before serving.

Meanwhile, into a hot oven 200, put the spring rolls in for around the same time (15 mins) till golden – we really like Aldis veggie spring rolls, they actually have proper Veg in them, not a weird mush like some we have had.

I have used Aldi ‘ping’ rice too – how lazy am I 😉 I just want to EAT and do not want to spend £35 on a takeaway.

Youngest loves this rice, it’s his standby meal with some frozen ready cooked chicken and whatever curry sauce he can afford 🤣

So here is our ‘Fakeaway’ for around £5 for 3 🎉

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
