British Classic – Sausage, Mash, Peas and Onion Gravy

The days are finally getting longer, and warmer, but the evenings are still cool.  Before BBQ and salads take over the menu, I thought I would sneak in some proper comfort food. Bangers and Mash, otherwise known as..

Sausage, Mash, Peas and Onion gravy – not refined, Not photogenic – just good home cooked family grub – Youngest is back for his ‘training shift’ at his seasonal job tomorrow, so something comforting before he has to learn again how to wake up before noon 🤣

I am cooking all 12 Sausages as Hubby and Youngest can happily scoff 3 each, and any leftovers will find homes in tomorrow’s lunch boxes 😉

I prefer to ovencook sausages, purely by choice, cook them any way you see fit, just make sure they are cooked through. I put them into an oven proof tray and into a hot oven (180) for 15-20 mins, check and turn halfway through.

I chop 3 large potatoes, boil in salted water till very tender.

then mash with a large knob of butter, a splash of milk and season to taste. I don’t peel them, just rinse.

I peel and finely slice an onion, and I lay it between the sausages drizzled with a tiny bit of oil and a pinch of black pepper, add the gravy – no meat juices here, so as I am a cook not a chef, instant granules are my standby, and for this type of meal, it adds to the comfort factor 😊

Cook a big bowl of peas – and you are done…
