What’s for Pudding? puddin… Lazy Lime ‘Cheesecake’

What’s for Pudding? Puddin… Is a question that is asked by Hubby most nights, sometimes it’s a yoghurt, sometime a biscuit or a piece of cake and obviously, since Christmas and the arrival of my Icecream maker – Icecream 😍 Tonight’s treat is a simple to make Lime Cheesecake. A really easy dessert for Mothers Day πŸ˜‡

I have some Aldi Super6 limes to use up, and I always have a tub of their cream double hanging around (I love a morning ‘proper’ coffee with a dribble of cream) Β – the Cheesecake tastes lush and takes 10 minutes to put together πŸ‘

 

I smash together half a pack ginger nuts (you could use digestives, but citrus and ginger are lushπŸ€—) mix with 30g melted butter.

press the biscuity mush into a flan dish 7-8 inch, whatever you have.

For the topping, I beat a whole tin of condensed milk with a 300ml tub of double cream, whisk together till thickening.

Into this, mix the grated rind of 4 limes (or 3 Lemons) and then, when you are ready, pour in the juice of 4 limes (or 3 Lemons) and whisk quickly.

you will see this magically turn from liquid to a thick, lush mix.

Quickly, using a silicon spatuala if you have one, pour over the biscuit base and even out – licking the bowl is mandatory πŸ˜‡ As you can see, I had enough left for 2 ‘mousse’

Chill overnight if you can, it will be softer if you eat it any sooner, but still taste amazing 😍
