Meat Free Monday – Simple Supper – Egg and Chips, yes really…

I enjoy looking for recipes for Meat Free Monday, I like veggie food and it has been a lovely addition to our food week – sometimes though, simple is best Egg and Chips is a  very simple, but delicious Meat Free Meal.

IMG_2818Like a lot of us, I like to buy high welfare eggs, free range – these are not available at present, due to the threat of bird flu, hens are being kept safe under cover and eggs are being labelled to reflect this temporary change. The poor birds, and farmers, what a pain… better than bird flu though.

I slowly heat the oil in a frying pan and add the eggs to slowly cook – I am not a fan of the ‘frilly’ fried egg – but cook ’em the way you like them.

The chips are not high welfare, though I am sure Aldi ensure the spuds are well cared for 🤣

So, 2 slow fried eggs with a pile of French fries, fried mushrooms and optional ketchup 😇

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
