Bacon and Stilton Gnocchi #Foodwaste Use it up meal with Homemade Bread

I am having a fridge clearout before writing my grocery shopping list for the week – Stilton, Mozzarella, Streaky bacon and peppers to use up.

IMG_2827I always keep a pack of ’emergency’ Aldi Gnocchi in the cupboards and have a good stock of tinned tomatoes etc, so Bacon and Stilton Gnocchi with Home Baked seeded bread.

Starting with the bread I use the Thermomix 300ml water a pack of yeast heated at 37, speed 1 for a minute, then add 500g bread flour, a pinch of salt and mix for 3 minutes in dough setting, adding a handful of mixed seeds a minute before the end.

Turn out and leave for an hour to rise, then knock back, shape and leave to rise again for 30 minutes to an hour.  Onto a baking sheet and into a preheated oven (200) for 40 minutes to an hour, depending on how crusty you like it.

I make 2 loaves when it’s just the 2 of us, one Baguette is more than enough for us for 2 sittings.  The other lives in the freezer for another day.

I rinse the Thermomix bowl and dry off, then add a peeled, halved onion, a peeled fat clove of garlic and whizz for 10 seconds on speed 4, then scrape down the bowl.

Add  a good glug of olive oil, 8 slices of chopped streaky bacon (or whatever you have) and a diced small pepper and cook on heat 100, speed 1 for 3-4 minutes. You can do all of the above in a pan, just more chopping and stirring.

IMG_2836Add a tin of chopped tomatoes and a pinch of salt and pepper and a pinch of oregano, cook for another 3-4 minutes on heat 100 speed 1.

In an ovenproof dish stir the sauce through the raw gnocchi and add a crumbled 100g of Stilton cheese and top with a shredded ball of mozzarella, season to taste.

To serve, I am adding a thick chunk of bread and Rocket and tomato salad 🙂

This will feed us tonight with enough left for me to take for lunch tomorrow.
