Garlic Basil Chicken with Tomato Butter Sauce – Simple Supper

I had a busy ‘doing day’ today, just the normal stuff, washing, cleaning, bed stripping etc


Planned something simple, but absolutely delicious this is a major crowd pleaser and obviously minus the chicken, would be a great veggie pasta sauce 😋 Garlic Chicken with Tomato Butter Sauce with Spaghetti, from This recipe

I don’t use fresh tomatoes, a tin of Aldi chopped tomatoes are used.


I had a pack of chicken strips from Muscle Foods in the freezer, these are desfrosted and ‘stir fried’ in a chefs pan with olive oil, salt and pepper, cooked through and browned off – once done set aside – obviously miss this step out if catering for veggies.


Start to cook your spaghetti at this point in lots of salted boiling water.


In the same pan add a tin of tomatoes, 3 crushed cloves of garlic, and 50g of butter, stir through and simmer for several minutes.


Whilst this is cooking down take a bunch of basil, remove leaves and shred them finely.


Return the chicken and any juices to the pan, stir through, add the basil and another 20g of butter increase the heat to finish off – season to taste.



I add the spaghetti to the sauce, mix through and serve in bowls, with a small green salad.

This is a rich, but simple dish which tastes like it was a lot more complicated, a great standby for unexpected guests 😉
