Caramelised Grilled Pineapple with Greek Yoghurt

As most of you know, I mainly shop at Aldi, their produce is great, their staff friendly and I like their fast checkouts – I can be in and out in less than 30 minutes for a full weekly shop πŸ˜‡ This is NOT a sponsored post – just me being pleased with good service.

This set of Super6 offers looks great, Oranges for snacks, kale, the latest superfood, apples and plums, youngest eats them by the tonne – I decided to try something new to me with the Pineapple – at 45p each you can’t go wrong 😁

Caramelised Pineapple

I wanted to try cooking Pinapple for dessert, so apart from the sugar and butter, it’s quite healthy 🀣 Thought I,d tryΒ ThisΒ recipe

I peel core and cut the pineapple into 8 lengthways

and lay them on a lined grill tray – preheat the grill ready to go.

In a pan add 125g of butter and 100g of light brown sugar and a teaspoon of cinnamon (adjust to taste) – Mix together and over a low heat, melt till combined.

Paint the Pineapple slices with the butter mix and place under the hot grill – keep adding the butter mix.

turning the pineapple till brown and bubbling on all sides – remove and set aside for a moment.

I serve this with plain Greek yoghurt, which would gives a nice tartness against the Caramel but I am making Salted Caramel Icecream with Homemade fudge pieces – not so healthy but blooming lush 😍

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
