Fakeaway – Tex Mex Chicken Fajitas

Hi all, I’m back to the food now 🤗

After having a catch up with washing, cleaning shopping etc I wanted to make something quick, fresh and tasty.  Chicken Fajitas 😇


I have bell peppers to use, as well as a pack of Aldi wraps, so fajitas were obvious. The peppers are part of Aldi,s ‘Wonky Veg’ range – gorgeous ripe bell peppers – they are going to be sliced – so why not use them – we need to stop the ‘perfect veg’  taking over 😇

Chicken Thighs from freezer stash.

I start by marinating sliced chicken thighs in a marinade,


I would normally make my own, but with a recent Muscle food order, the sent a complimentary spicy rub, so I will use that today.

I mix this through the chicken and leave for an hour.

I slice 3 medium onions and 4 small bell peppers, these are tossed in olive oil with salt and pepper and put into an oven tray.  Add the chicken till all cooked through.


I am making some of my version of guacamole too – the flesh of a large advacado.

chopped spring onion, chopped, deseeded tomatoes, finely diced chilli, lemon juice (no limes available) half a pack of fresh coriander and season, this is all forked and mixed till a chunky consistency.


Don’t make this too long before using as it goes brown quickly and is so good fresh.

IMG_2957I warm the wraps for a few minutes then it’s all dig in, adding salad


grated cheese, natural  yoghurt, chopped coriander, the spicy chicken mix, guacamole – really quick and easy, but really tasty and filling.
