Simple Supper – Blue Cheese Burgers and Double stuffed Skins

As the weather gets brighter, we have started to sort the garden and do a few Spring cleaning jobs, I wanted something simple for tonight.


Beef Hache Steaks (Burgers) from Muscle Food in Brioche Buns with Gorgonzola and salad, double stuffed potato skins with bacon, onion and cheddar ๐Ÿ˜‡

I microwave a medium size potato per person, for about 8-9 minutes on high – when they have cooled enough to handle, cut them in half and scoop out the flesh into a separate bowl.


Whilst the potatoes are cooking, gently fry off some chopped smoked bacon, and a finely diced small onion. This is a really good way of using up those bits you have in the fridge, mushrooms, peppers, ham instead of bacon, whatever you have


Mix the potato flesh in with the bacon mix, 2 tablespoons of plain yoghurt and 50g of grated cheddar- season to taste.

Spoon the mix back into the potato skins and pop onto a baking sheet, ready to go into a preheated oven (180) for approx 15 mins till golden and yummy.


When the potatoes are in the oven, heat a pan or griddle and cook your burgers.


toast the cut sides of your burger Buns.


and plate up with the salad etc ready for them.


When you have turned your Burgers, in the last minutes, add a good blob of Aldiย Gorgonzola,ย as it starts to melt pop onto the buns, I have added caramelised red onion (these are homemade see this Linkย )ย and Rocket leaves.


Plate up the potatoes and a green salad and enjoy – Simple ๐Ÿ˜‰
