Meat Free Monday – Beetroot, Goats Cheese, Onion and Walnut Tart with Warm Potato Salad

Back to work today after a week off, why is it I wake up around 6 most days, including weekends – but this morning, I swear, I could have slept for England ๐Ÿ™„

Anyway, fridge clearing needed, so 2 cooked beetroots, cheese The remains of the caramelised onions, and puff pastry means ย Tarts. ย Beetroot, onion, Goats Cheese and Walnut Tarts with salad potatoes and Rocket leaves.

This is barely a recipe, just placing things together and applying heat ๐Ÿคฃ

I have a sheet of Aldi ready rolled puff pastry, laid out and cut into 4 rectangles, leave a gap around the edges of 1-2cm then

add A smear of the caramelised onions, cubes of beetroot, torn pieces of Goats Cheese, and some roughly broken up walnuts to the pastry. Add a shake of salt and pepper and a drizzle of olive oil.

Pop these onto a lined baking sheet, and into a preheated (200) oven for approx 15 mins, till risen and golden.

 

I have cooked some salad potatoes till just cooked,

and dressed them in a vinigarette of olive oil, 1 teaspoon Dijon mustard, Juice of half a lemon salt and pepper to taste.

Drain and cool the potatoes till warm, then add the dressing, I have added some sliced spring onion for colour.

Plate up the Tarts with with warm potato salad.

A handful of salad leaves with a drizzle of pomegranate molasses and dinner is served ๐Ÿ˜‰
