Fakeaway – Orange Chicken and Rice

Inspired by The Big Bang Theory and Sheldons eternal hunt for OrangeĀ Chicken, I thought I would give it a go, not something I have seen on our local Chinese Takeaway menus.

I foundĀ This LinkĀ on Pinterest, and as usual, I am adapting it as I don’t have Sesame seeds etc so will have a ‘play’ – I figure if I have never tried it, as long as it tastes good, no one can critique it šŸ¤£ All converted from cups.

I released some skinless boneless chicken thighs from the freezer last night, 8 of thenm, enough for leftovers šŸ˜‰

I cut these up into bite size pieces and into a large freezer bag I add approx 4 tablespoons of Aldi dark soy sauce, 3 tablespoons of cornflour and tablespoons of water mixed into a paste and mixed thoroughly with the chicken – leave for 20 minutes to marinate.

Whilst this is ‘doing’ into a bowl add 200 ml of Aldi orange juice, 2 tablespoons of brown sugar, a tablespoon each of dark soy sauce, hoisin sauce and cornflour, 2 teaspoons of rice vinegar (I just used white vinegar) the zest of an orange (didn’t use, didn’t have) and a shake of Tabasco (use as much as you like, we are wimps).

Whisk this mix together and leave till ready.

Heat a couple of tablespoons of Veg oil in a chefs or frying pan to medium heat, and add you chicken, brown off and cook through.

Add your sauce mix and cook till thickened and glossy.

I am adding some spring onions for looks and a bit of crunch.

I am serving with brown rice, and await the crys of joy from Hubby šŸ¤£šŸ¤£

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
