Meat Free Monday – Roasted Vegetable Lasagne

Lasagne is a proper crowd pleaser – I am making a veggie version, which is still packed with flavour just without the meat 😊

Into an ovenproof dish I am adding a good glug of olive oil, chopped garlic and a teaspoon of dried oregano.

To this I add 6 chopped courgette, 2 chopped bell peppers, half a pack of chestnut mushrooms (Aldi Super6), 2 peeled and chopped medium onions and about a quarter of a butternut squash.

Toss this all through the olive oil and pop into a hot (200) oven for half an hour till roasted.

When the veg is ready, I tip into the a large pan and add a can of chopped tomatoes, a good squirt of tomato purée and half a teaspoon of sugar, A glug of balsamic vinegar and about 200ml of Veg stock, mix together and cook till thickened.

add a pack of spinach and wilt down –  taste and season as you go – this is where the flavour is so ramp it up.

Whilst all this is happening, make a cheese sauce, 300ml milk, 30g cornflower, 30g butter, 100g of grated cheddar, a teaspoon of mustard powder, salt and pepper.  I throw this all into the Thermomix bowl and cook at speed 3 heat 80 for 8 minutes, you can use a pan, keep stirring till smooth – season to taste.

Time to build the lasagne – in a medium sized ovenproof dish (Inused the tine I roasted the veg in) put a layer of the vegetable mix.

Pop on dried lasagne sheets, a thin layer of cheese sauce – repeat till you finish with a layer of cheese sauce – I break the sheets in half so it’s easier to portion up.

A Sprinkle of cheese then into the oven for 20/30 minutes till bubbling and golden.

I am serving with homemade bread, I have made this lots of times – my basic recipe is 300ml hand warm water, a sachet of dried yeast, 500g bread flour, salt – I mix this in the Thermomix for 3 minutes on dough setting – or by hand till soft and pliant.

Leave for an hour to rise for an hour, knock back and shape, cook for 50-60 minutes in a preheated oven (200) with a cupful of cold water in a pan at the bottom of the oven to create steam.

This is just a great dish, please do try it, it would be great for kids who are reluctant to eat veggies 🤗
