Simple Supper – Baked Camembert, Charcuterie, Olives and stuffed Chilli peppers with Homemade Bread

We have been make the most of our time, Hubby in the garden ‘doing’ and I have been doing a bot of spring cleaning, properly clearing and clearing.

IMG_3209For dinner, I am keeping it simple and pretty much off the shelf.

Baked Camembert – a round of Aldi Camembert, plastic removed, with the ‘lid’ cut off, sliced of garlic are studded in, and a small splash of Vermouth, this helps it stay molten a little longer.

Soak the wooden case for a minute, and pop the cheese back into its wooden case – in to a hot (200) oven for approx 10 minutes till the middle is bubbling hot but the rind is still holding.

To go with this cheesy loveliness, I have bought a selection of Italian cured meats, marinated olives, cream cheese stuffed sweet peppers, some falafel that Youngest didn’t want, Hummus, Carrot and celery batons and one of the baguettes I made earlier last week, defrosted and sliced.

No stress, delicious supper, followed by the rich Raspberry Ganache cups I made yesterday.

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
