Simple Supper – Chicken Salad with Jacket Potato

Having a use up of the end of week salad Veg, so simple Chicken Salad with Jacket Potato. I normally go food shopping on a Wednesday, but following a bit of an over shop for Easter, I want to use up some stuff before buying more.


I am jazzing up chicken breasts from the freezer stash with some olive oil, lemon juice and oregano, garlic granules and popping it all into a freezer bag to marinate for at least an hour.


Then pop it into a preheated oven,


baking it for 20 minutes at 190.


The potatoes will join them after a quick 10 minute blast in the microwave.


The salad is just lettuce, cucumber, celery, advacado, spring onions with the remains of some blue cheese dressing that needs using up.


When the Chicken is cooked through, and the potatoes are Crispy on the outside and fluffy in the middle, take them out and get ready to plate up.

As I said a simple supper, but fresh, healthy and tasty.
