Meat Free Monday- ‘Oops I made it again’ – Lush Mushroom and Halloumi Burgers

As the title says, a repeat, but these Field Mushroom and Halloumi Burgers are the Bees Knees. Here’s my previous post Here

Aldi Field Mushrooms are just brill, really huge and firm.

I marinate these in a dressing made of splash of soy sauce, a crushed Clove of garlic, a teaspoon of English mustard, 2 tablespoons of sweet chilli sauce (I make mine – Recipe)

cover the mushroom in the dressing and leave for 10 minutes, pop the grill on high whilst you wait.  Grill for 10 minutes, turn over halfway through.

To go with these yummy mushrooms, I am slicing a block of Halloumi into pound coin thick slices

which are fried till golden brown on each side.

We are having Aldi frozen French Fries with them,

to counter the naughtiness I am making some coleslaw with a finely sliced onion, grated carrot and finely shredded red cabbage, toss in a couple of tablespoons of mayonnaise, salt and pepper.

I am also finely slicing a red onion and adding some red wine vinegar and a spoon of sugar to lightly ‘pickle’ it for some crunch.

I am serving in toasted Aldi Brioche Buns, some Rocket leaves, the mushroom, a couple of slices of Halloumi, a little pickled red onion.

Add the crispy fries and fresh coleslaw – this is a Meat Free feast 😋

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
