Midweek Meals – Spiced Lamb salad Wraps – quick and delicious

On Sunday I made a delicious Kleftico with a boned Lamb Shoulder from Market Porter. So in the spirit of loving your leftovers, I am making spicy Lamb Wraps.


I have about half of it left over, so with some bell peppers and onions a couple of stray tomatoes and the left over Mushroom from yesterday waiting to be used, I fried them up with sliced Lamb, garlic, cumin, coriander, Chilli, salt, pepper and served in flatbreads with a delicious herby salad and garlic and onion dip.


I started by slicing the bell peppers and onions, with 2 cloves of crushed garlic, this is panfried with a little olive oil and some salt, pepper and a teaspoon of Smoked paprika.

Then add the sliced lamb


cook down till browned and smelling amazing.


For the salad, I add diced cucumber, celery, watercress, rocket leaves, spring onions – I finely chop a whole pack of fresh Corriander and this is tossed together.

The wraps are constructed at the table, salad, meat and garlic and onion dip – OMG 😍 These are SO good and hardly any work 😇
