Something Fishy – Fish Taco’s – Simple Supper

Thursday is my ‘doing’ day – catching up with washing, cleaning, sorting and the dreaded VAT return is a special treat this week 🙄 Doing a simple supper, I am making Fish Taco’s – essentially a posh version of a fish finger sandwich 🤣

I have a pack of Aldi frozen cod fillets, which I have defrosted and they had a Mexican special with Taco’s etc I bought some flat bottomed ones, as they looked easy to fill.

Once the cod fillets are defrosted, I pat them dry then I cut each one into 4 slices.

These will be tossed in seasoned flour, I have used Aldi taco seasoning mixed with plain flour.

These are then fried on hot oil – I’m sure you could oven bake them, but I want a Crispy coating to add a different texture.

The rest couldn’t be simpler, finely shredded Iceburg lettuce, sliced spring onions, diced bell pepper all piled into the taco’s, with a bit of chopped fresh coriander.

Add 2/3 pieces of the hot fish and whatever sauce you fancy, we have a choice of chilli sauce, Mayo or tartare sauce. Add a squirt of lemon juice and add some finely sliced chilli’s if that’s your thing 🤗

A simple fish supper, light, fresh and tasty.

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
