Packed Lunch, that packs a punch

As you know, youngest is back home, and has a temporary seasonal job to help pay his Uni house rent.  He works shifts, the most common ones 6am-6:30pm or 12:00 – 10:30 pm and he likes to take something not all sandwich based. He also gets a ‘proper’ meal, which I plate up for him to have either after work, or the following lunchtime.

IMG_3394On a recent trip to Aldi, I found these frozen healthy meal bases and I had a ‘Ahh-Ha’ moment.

Each pack cost £1.49 – he loves the giant Cous Cous one

I have made 3 meals out of each, they Thai Veg one I put over half a pack of micro rice.

I mix them with a handful of frozen prawns at £3.29 a pack, this makes 9/10 meals, with a dressing of either sweet chilli sauce

Or this Aldi yummy soy, Chilli and ginger dressing.

I also make up a pack of ready to wok noodles, 49p for a pack for 2 portions, with some prawns, sliced spring onions and dressed in Aldi Oyster sauce.

These can be thrown into the microwave during his break and are filling at pretty healthy.

He tops these up with fruit, popcorn etc. and his favourite ham and cucumber sandwiches.
