Saturday Supper – Lamb Burger with Feta, Tzatziki and Oregano Sweet Potato Fries

Lovely quiet night with just Hubby and I to feed, as you may have noticed I love  Lamb with a Greek twist, so Lamb Burgers with Feta and a homemade tzatziki sauce, I found some sweet potato fries in Aldi, and will sprinkle with oregano before cooking and sprinkle with Feta to serve.

IMG_3402These Lamb Burgers just looked lush, a good burger can taste as good as any steak if cooked right.

I am griddling the Burgers and serving them on Ciabatta Rolls.

The oven is on high (200)

after tossing in dried oregano the fries go in.

The Tzatziki is easy, I take half a cucumber, peel and cut in half lengthwise, scrape out the seeds then finely dice.

Chop a pack of mint leaves, teaspoon garlic powder, add the cucumber, mint to half a pot of Greek Yoghurt add a squirt of lemon juice – season to taste, leave in fridge till ready. You should add fresh dill, but I didn’t have any.

I have ‘quick pickled’ some red cabbage

finely slice red cabbage

in a sealable container

add a tablespoon of sugar, salt, pepper corns, chilli flakes, bay leaves, 50/50 cider vinegar and water till just covered

shake and leave for a few hours

Serve up with the burger inside the warmed Ciabatta roll, with a little lettuce, Feta cheese and tzatziki – a side of oregano Sweet Potato fries and the pickled red cabbage.

Delicious combination with little effort 😉

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...

    1. Always peppers & courgettes, often with aubergine & red onions as well, I often roast tomatoes but do those separately. I grow all those on our allotment, so it uses up summer gluts!

      1. Sounds lush – Making my mouth water, I adore Aubergine, but the menfolk are less keen, you have inspired me to buy a couple of plants this year to grow in growbags (tomatoes and courgettes) also going to get some Rocket seeds, our favourite salad greens 🤗

  1. Oh that looks scrummy! We’ve had roast veg with pork chops tonight, DH declared it very tasty before disappearing off to finish his brewing ☺
