Lovely quiet night with just Hubby and I to feed, as you may have noticed I love Lamb with a Greek twist, so Lamb Burgers with Feta and a homemade tzatziki sauce, I found some sweet potato fries in Aldi, and will sprinkle with oregano before cooking and sprinkle with Feta to serve.
These Lamb Burgers just looked lush, a good burger can taste as good as any steak if cooked right.
I am griddling the Burgers and serving them on Ciabatta Rolls.
The oven is on high (200)
after tossing in dried oregano the fries go in.
The Tzatziki is easy, I take half a cucumber, peel and cut in half lengthwise, scrape out the seeds then finely dice.
Chop a pack of mint leaves, teaspoon garlic powder, add the cucumber, mint to half a pot of Greek Yoghurt add a squirt of lemon juice – season to taste, leave in fridge till ready. You should add fresh dill, but I didn’t have any.
I have ‘quick pickled’ some red cabbage
finely slice red cabbage
in a sealable container
add a tablespoon of sugar, salt, pepper corns, chilli flakes, bay leaves, 50/50 cider vinegar and water till just covered
shake and leave for a few hours
Serve up with the burger inside the warmed Ciabatta roll, with a little lettuce, Feta cheese and tzatziki – a side of oregano Sweet Potato fries and the pickled red cabbage.
Delicious combination with little effort 😉
