I have fridge bits to use up, onions, peppers etc so took a pack of Market porter Mince out of the freezer last night – making Burrito Bowls.
I start by slicing 2 small onions and crushing 3 cloves of garlic
and popping them into the frying pan with a pinch of black pepper and a tablespoon of oil.
I then add the minced Beef, and once browned the sliced red bell pepper.
I add a crumbled oxo cube, a good shake of Worcestershire sauce, a teaspoon of cumin, a little chilli and a pinch of sea salt, stir through and ensure the mince is browned.
Then add a can of crushed tomatoes, and a good squirt of tomato purée with half a can of water.
Stir through, turn the heat down low and leave to cook through for 30-40 minutes, stirring occasionally till thick and rich.
Rather than the traditional Burrito Wraps, I am making tortillas chips, take a wrap
slice into 3, then each third, cut into triangles
lay them out of a baking sheet
cook for approx 5-10 minutes in a medium oven (180) till browned.
To build up,the bowl, add a big bowl full of the chilli Beef, a large portion of sliced iceberg lettuce and any other salad you lik, and the Tortilla chips, a big blob of natural yoghurt with chopped fresh coriander.
