Chorizo, Spinach, Pepper Mushroom Gnocchi Loving you’re Leftovers

IMG_3799I am having a fridge clear today, and we have half a Chorizo ring to use up, a few random tomatoes, the 3/4 of a red pepper that I ‘knew’ was in the fridge, but was hiding from me yesterday and some mushrooms that are starting to look like yoda – wrinkled not green 🀣 – Aldi Gnocchi in the cupboard, sounds like a meal to me 😊


I start by dicing a medium brown onion, a fat sliced clove of garlic, sliced mushrooms, Β a sliced red pepper and sliced, skinned chorizo, these are gently fried, till the Chorizo starts letting its oil out.


When Chorizo mix is pretty much cooked through, set it to one side, and in the same pan,


pop a couple of teaspoons of olive oil in the pan and gently fry the Gnocchi till its golden and crisp on the outside.


Tip the chorizo mix back into the Gnocchi, Stir through. Β Add a few good handfuls of baby leaf spinach, to the Gnocchi and toss through.


I am serving on a bed of Rocket leaves with some tomato and grated Parmesan to finish.
